On Monday October 1st we had a wonderful presentation presented by Chef John Litton from Town Dock, and Chef Jenna Raia, Chef Instructor, as wll as Nick and Dan from Always Food Safe.
Chef John demonstrated a whole dirty squid, explained the different species, how to clean the squid and had a calamari tasting.
Chef Jenna spoke about her experience at the CIA, as she attended the Under the Sea Fish class with Chef Instructor Martin Matysik. Chef Jenna demonstrated how to fillet Red snapper and had a Gravlax tasting.
Nick and Dan from Always Food Safe also presented speaking about their business and how they can help the membership with food safety.
